Primary acid found in grapes. Use to increase acidity (lower pH) in wine making. Correct acid levels will balance fruit sugars, giving depth (tartness) to a wine, and will help stabilize wine color, and reduce viability of spoilage organism. Proper pH levels ensure heathy fermentation.

1/4 tsp (1.9 grams) tartaric acid will raise total acidity by .05 percent per gallon.

Optimal total acid levels:
White wine: 0.7% to 0.9%
Red wine: 0.6% to 0.9%.
